Apple Pecan Crunch Salad


  • 4 red apples, such as Jonathon or Red Rome, cored and chopped
  • 4 green apples, such as Granny Smith, cored and chopped
  • 1 tablespoon fresh lemon juice
  • 3 celery stalks, chopped
  • 1 cup pecans, toasted, chopped
  • 1/4 cup packed light brown sugar
  • 1/2 cup Sour Cream
  • 1/4 cup plus 1 tablespoon light mayonnaise
  • 1/3 cup dark seedless raisins
  • 1/2 cup Heavy Cream


  1. Place the chopped apples into a large mixing bowl; add the lemon juice and toss lightly to coat evenly. Stir in the celery and pecans;toss until combined, set aside. In a small mixing bowl, stir together the brown sugar, sour cream and mayonnaise; fold in the raisins. Next, in a chilled mixing bowl, whip the cream until just stiff.Gently fold whipped cream into the sour cream mixture. Pour the combined mixture over the apples and toss lightly until the apples are evenly coated. Serve salad in a large bowl lined with lettuce leaves, or on lettuce-lined salad plates. Enjoy!
