Tomato Basil Crustless Quiche


  • 10 eggs, beaten
  • 1 lb. bacon, cooked and crumbled
  • 1 1/2 c. milk or cream
  • 1/2 c. packaged sun dried tomatoes, sliced thinly
  • 1 1/2 c. cheese, your choice
  • 2 handfuls of spinach
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1 tsp. dried basil
  • 2 cloves garlic, crushed
  • 1/2 yellow onion, chopped finely


  1. Combine all ingredients in a mixing bowl. Pour into a 9" x 13" baking dish and bake at 37 degrees F for 45 minutes or until browned and cooked through.
  2. Variations: substitute bacon or ham or cooked sausage. Add chives, bell peppers, mushrooms, cooked vegetables or frozen hash browns.
  3. Tip: Use white cheddar and parmesan mix for cheese. Add fresh cracked pepper and fresh basil on top before baking.
