Pot de Creme


  • 6 oz. dark chocolate, high quality
  • 1 1/2 c. heavy cream
  • 1/2 c. half and half
  • 3 egg yolks
  • 3 tbsp. sugar
  • 1/8 tsp. salt
  • 1 tsp. jerk seasoning
  • 1 tsp. vanilla
  • Whipped cream and toppings of your choice


  1. Place cream, half and half, egg yolks, sugar, jerk seasoning, vanilla, salt and chocolate in a saucepan over medium heat and whisking to combine ingredients. Continue to whisk until mixture just starts to bubble and is thick enough to coat the back of a spoon.
  2. Pour mixture into individual serving containers and refrigerate for 6 - 8 hours or until set.
  3. Let sit a room temperature for 5 minutes before serving.
  4. Top with whipped cream, chocolate shavings, fruit puree, or other desired topping.
