Cornbread Salad

Ingredients
- 8.5 oz. package cornbread mix
- 1 package (1 oz.) ranch dressing mix
- 1 cup sour cream
- 1 cup mayonnaise
- 1/2 cup green peppers, chopped
- 1/2 cup sweet red peppers, chopped
- 1/2 cup red onion, chopped
- 2 large tomatoes, diced
- 2 cups canned or frozen corn, drained
- 1 can black beans, drained
- 2 cups shredded cheddar cheese
- 10 slices bacon, cooked and crumbled
- 1 Tbsp. chives, chopped (optional)
Instructions
- Mix and bake cornbread according to package. Cool, then crumble.
- Combine ranch dressing mix, sour cream and mayonnaise in a small bowl. In another bowl, mix peppers, onions, tomatoes, beans and corn.
- In a 3-qt. salad bowl, layer 1/2 of the cornbread, 1/2, of veggies, 1/2 of dressing, 1/2 of cheese and 1/2 of bacon. Repeat layers until all ingredients are used.
- Garnish with chives.
