Chile Con Queso


  • 3/4 c. whole milk
  • 1 lb. American yellow cheese, cubed
  • 1 lb. sharp cheddar cheese, cubed
  • 2 lbs. Monterrey Jack cheese, cubed
  • 1 can chopped green chiles (7 oz.), drained
  • 1 can diced tomatoes (14.5 oz.), drained
  • 1 can jalapenos (7 oz.), drained, chopped (and use to adjust heat level to the desired point)
  • 1 tbsp. jerk seasoning


  1. Pour milk into a nonstick pot and heat over medium heat until hot.
  2. Add cheeses, stirring as you go. Heat until mixture is thick.
  3. Add chopped chiles, jalapenos and diced tomatoes. Stir well.
  4. Add jerk seasoning. Stir well.
  5. Heat to serving temperature and serve with corn chips.
  6. Reheat in microwave as needed.
