Blueberry Sour Cream Pie

Ingredients

  • 1 unbaked pie crust
  • 1 cup sour cream
  • 2 Tbsp. flour
  • 1 1/4 cups sugar
  • 1 tsp. vanilla
  • 1/4 tsp. salt
  • 1 egg, beaten
  • 2 1/2 cups fresh blueberries
  • Crumble Topping:
  • 4 Tbsp. flour
  • 2 Tbsp. butter
  • 1/2 cup chopped pecans

Instructions

  1. Preheat oven to 375 degrees.
  2. Combine sour cream, flour, sugar, vanilla, salt & egg. Fold in blueberries and pour into unbaked pie crust. Bake for 45 minutes, or until filling is set.
  3. Remove from oven and sprinkle with crumble topping. Bake another 10 - 15 minutes or until lightly browned.
  4. Cool pie at room temperature for 1 hour. Transfer to refrigerator and cool 1 - 4 hours to allow filling to fully set and flavors to meld.
