Sweet and Spicy Cornbread

Ingredients

  • 1 stick butter (room temperature)
  • 1 1/2 cups flour (self-rising)
  • 1 1/2 cups cornmeal
  • 1/4 cup sugar
  • 1 egg
  • 1 1/3 cups milk
  • 1/4 cup butter (melted)
  • 1/4 cup pickled jalapeños (diced)
  • 1 cup Colby jack cheese (shredded)

Instructions

  1. Preheat oven to 400 degrees. Place stick of butter in a 9 X 13 pan and allow to preheat in oven. In a large bowl, mix together the flour, cornmeal, sugar, egg, milk, melted butter, jalapeños and cheese until well blended. Pour the batter into the hot pan. Bake for 30 minutes or until a toothpick inserted in the center comes out clean.
