Sweet and Spicy Cornbread

Ingredients
- 1 stick butter (room temperature)
- 1 1/2 cups flour (self-rising)
- 1 1/2 cups cornmeal
- 1/4 cup sugar
- 1 egg
- 1 1/3 cups milk
- 1/4 cup butter (melted)
- 1/4 cup pickled jalapeños (diced)
- 1 cup Colby jack cheese (shredded)
Instructions
- Preheat oven to 400 degrees. Place stick of butter in a 9 X 13 pan and allow to preheat in oven.
- In a large bowl, mix together the flour, cornmeal, sugar, egg, milk, melted butter, jalapeños and cheese until well blended. Pour the batter into the hot pan.
- Bake for 30 minutes or until a toothpick inserted in the center comes out clean.
