Easy Cheesy Scalloped Potatoes


  • 8 medium potatoes
  • 1 can cream of chicken soup
  • 1/2 cup diced green onions
  • 1 1/2 cups sour cream
  • 1/2 cup heavy cream
  • 2 cups cheddar cheese (shredded)


  1. Preheat oven to 350 degrees. Partially boil the 8 medium potatoes. Peel and slice into a buttered 9x13 casserole dish.
  2. Heat the cream of chicken soup, diced green onions, sour cream and heavy cream on the stovetop until warm and completely blended together. Pour this mixture over the top of the potatoes and sprinkle the top with the 2 cups of cheddar cheese. You can put 1 cup of cheese over the potatoes, then the sour cream mixture, then the other 1 cup of cheese if you like. Either way is delicious!
  3. Bake for 35-40 min.
  4. This recipe is a great make ahead side dish. Recipe can be refrigerated for up to 3 days ahead. Let sit at room temperature for about 30 minutes before you bake them.
