Ring Around The Berries


  • 2 envelopes unflavored gelatin
  • 1/2 cup cold water
  • 16 ounces cream cheese (softened)
  • 1 cup sugar
  • 1 tsp almond extract
  • 1/4 tsp salt
  • 2 cups milk
  • 1 cup heavy cream (whipped)
  • fresh sweetened berries (strawberries, raspberries, blackberries)
  • powdered sugar


  1. In a small pan combine the gelatin and the water. Stir over low heat until dissolved.
  2. In a mixing bowl, combine the cream cheese, sugar, almond extract, and salt together. With a hand-held mixer blend until smooth. Gradually add the milk and the gelatin. Chill until slightly thickened. About 15 minutes.
  3. Gently fold in whipped cream.
  4. Pour the mixture into a 10-inch spring form pan and chill until firm, about 4 hours.
  5. Unmold on a plate. Place strawberries, raspberries and blueberries in the center of the cake. Dust with powdered sugar.
