BBQ Loaded Baked Potato Casserole

Ingredients
- 2 lb. bag tater tots
- Salt & pepper to taste
- 1/2 cup butter
- 1/2 cup onion, chopped
- 6-8 slices bacon, cooked and crumbled
- 4 cups cheddar cheese, shredded
- 18 oz. shredded and prepared BBQ beef or 2 lbs. browned ground beef with BBQ sauce
- 1/2 cup sour cream and 1/4 cup ranch dressing - mixed together
- 2 Tbsp. green onion, green parts only, sliced (optional)
Instructions
- Preheat oven to 350 degrees.
- Layer tater tots in a greased 9"x13" pan. Season with salt and pepper and dot with butter.
- Add onions, 1/2 of the bacon and 1/2 of the cheese.
- Cover with BBQ beef and bake covered with foil for 1 hour.
- Top with ranch dressing / sour cream mixture, remaining cheese, and bacon. Return to oven until cheese is melted.
- Garnish with green onion.
