S'mores Cheesecake

Ingredients
- Crust:
- 2 1/2 cups graham cracker crumbs
- 1/3 cup sugar
- 1/2 cup butter, melted
- Filling:
- 16 oz. cream cheese, softened
- 1 can sweetened condensed milk
- 3 eggs
- 2 tsp. vanilla
- 1 cup mini marshmallows
- 1 cup mini chocolate chips
- Topping:
- 1 cup mini marshmallows
- 1 Tbsp. shortening
- 1/2 cup mini chocolate chips
- 2 Tbsp. graham cracker crumbs
Instructions
- Mix all ingredients for crust and press along the bottom and sides of a 9" spring form pan.
- Preheat oven to 350 degrees.
- Blend all ingredients for filling, with the exception of the chocolate chips and marshmallows. Once mixture is combined, fold in chocolate chips and marshmallows. Pour filling into the crust and bake for 40 minutes or until center is almost set.
- Sprinkle cake with one cup mini marshmallows and bake an additional 4 - 6 minutes or until marshmallows puff and are slightly browned. Meanwhile, melt chocolate chips and shortening. Drizzle over marshmallows. Sprinkle with graham cracker crumbs.
- Let cheesecake sit at room temperature for 1 hour. Chill cheesecake in refrigerator for at least 1 hour, preferably 4 hours or overnight, before removing from pan and serving.
