Overnight Caramel French Toast

Ingredients

  • For Caramel:
  • 1 cup brown sugar
  • 1/2 cup butter
  • 2 Tbsp. light corn syrup
  • 12 slices of thick Texas toast, cut diagonal into triangles
  • 1/4 cup sugar
  • 1 tsp. cinnamon, divided
  • 6 eggs
  • 1 1/2 cups milk
  • 1 tsp. vanilla
  • 1/4 tsp. salt
  • Optional for serving:
  • pancake syrup
  • whipped cream
  • fresh berries

Instructions

  1. In a saucepan over medium heat, bring first 3 ingredients to a boil. Pour into a greased 9"x13" glass pan.
  2. Shingle bread pieces by layering halves into pan, with flat edges in the caramel and triangle tops pointing up.
  3. Combine sugar and 1/2 tsp. cinnamon and sprinkle over bread.
  4. In a large bowl, beat eggs, milk, remaining 1/2 tsp. cinnamon, vanilla and salt. Pour over bread.
  5. Cover and refrigerate overnight.
  6. Preheat oven to 350 degrees.
  7. Bake for 35 - 40 minutes or until set.
