Overnight Caramel French Toast

Ingredients
- For Caramel:
- 1 cup brown sugar
- 1/2 cup butter
- 2 Tbsp. light corn syrup
- 12 slices of thick Texas toast, cut diagonal into triangles
- 1/4 cup sugar
- 1 tsp. cinnamon, divided
- 6 eggs
- 1 1/2 cups milk
- 1 tsp. vanilla
- 1/4 tsp. salt
- Optional for serving:
- pancake syrup
- whipped cream
- fresh berries
Instructions
- In a saucepan over medium heat, bring first 3 ingredients to a boil. Pour into a greased 9"x13" glass pan.
- Shingle bread pieces by layering halves into pan, with flat edges in the caramel and triangle tops pointing up.
- Combine sugar and 1/2 tsp. cinnamon and sprinkle over bread.
- In a large bowl, beat eggs, milk, remaining 1/2 tsp. cinnamon, vanilla and salt. Pour over bread.
- Cover and refrigerate overnight.
- Preheat oven to 350 degrees.
- Bake for 35 - 40 minutes or until set.
