Breakfast Egg Squares


  • 1 pound regular pork sausage (cooked and drained)
  • 1/2 cup mushrooms (diced)
  • 1/2 cup green onions (sliced)
  • 2 medium tomatoes (chopped)
  • 2 cups mozzarella cheese (shredded)
  • 1 1/4 cups Bisquick baking mix
  • 12 eggs
  • 1 cup milk
  • 1 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp dried oregano leaves


  1. Preheat oven to 350 degrees. Grease rectangular baking dish. Layer sausage, mushrooms, onions, tomatoes and cheese in baking dish. In a large mixing bowl, mix the baking mix, eggs, milk, salt, pepper and oregano until thoroughly mixed. Pour over the sausage mixture. Bake for 30 minutes or until golden brown. Let set for 10 minutes. Cut and serve.Variation Tip:For a leaner recipe, substitute with turkey sausage, reduced-fat cheddar cheese and fat-free or 2% milk.
