Cheddar Crunch Chicken- By Kitchen Kimberley


  • 1/2 c. butter 4 cloves garlic, minced
  • 1/2 c. plain dry bread crumbs
  • 1/2 c. buttery, round crackers, crushed (start with 15 crackers) 1/2 c. freshly grated Parmesan cheese
  • 1 1/2 c. shredded Cheddar cheese
  • 1 tsp. dried parsley
  • 1/4 tsp. freshly ground black pepper
  • 1 lb. chicken tenders


  1. Preheat oven to 350 degrees. In a small saucepan over low heat, melt the butter. Add garlic and cook until tender, about 3 minutes; remove from heat and allow to cool slightly. Meanwhile, in a shallow bowl or pie plate, mix remaining ingredients, except chicken. Sprinkle 1/8 cup of the crumb mixture over the bottom of a 9 x 13?inch baking dish. Dip each chicken tender into the garlic butter to coat well, and then press chicken into the breading mixture, turning to coat well. Arrange coated chicken evenly in the baking dish. Drizzle with any remaining butter and top with remaining breadcrumb mixture. Bake for 20 minutes
